A gentle starter to stimulate the appetite
Cauliflower, feta and pomegranate tabbouleh

For 4 people, you will need 1 large cauliflower, 2 teaspoons of allspice mix, 1 pomegranate, 1 yellow lemon, 1 red onion, 40g of slivered almonds, 1 bunch of chopped parsley, 100g of feta cheese, 1 bunch of chopped mint, 4 tablespoons of olive oil, salt and pepper.
Preheat the oven to 190°C/th. 6-7.
Remove the cauliflower's large leaves, rinse it and chop it roughly. Blend the chopped cauliflower in a food processor until it resembles semolina. Add the allspice mixture and 2 tablespoons of olive oil, and season with salt and pepper. Mix everything together before spreading out on an ovenproof tray covered with baking parchment. Place in the oven for 15 minutes, stirring again halfway through cooking. Leave to cool and place in a salad bowl.
Stem the pomegranate. Squeeze the lemon. Peel and chop the onion. Fry the almonds for 3 minutes without fat. Add the almonds, pomegranate, parsley, diced feta, lemon juice and 2 tablespoons of olive oil to the cauliflower.
Chill overnight. Before serving, mix well and sprinkle with fresh mint.

Eating a gourmet meal while staying healthy
Smoked salmon wrap
For 4 people, you'll need: 4 wheat tortillas, 400g lettuce, 4 slices smoked salmon, 4 tablespoons Saint Môret, 1 tablespoon chives, 1 tablespoon chopped dill, salt and pepper.
Spread the tortillas with fromage frais or crème fraîche to taste. Place a slice of smoked salmon on each cheese-spread tortilla, then add some lettuce leaves. Sprinkle with chopped dill and chives and season with salt and pepper.
Then roll up the smoked salmon wraps and wrap them tightly in cling film to keep them compact. Place the smoked salmon wraps in the fridge until ready to eat.

A dessert to fill you up
Banana bread

For 4 people, you'll need: 2 bananas, 250g flour, 150g melted butter, 120g sugar, 1 sachet vanilla sugar, 150g walnuts, 3 eggs and 1 teaspoon baking powder.
Preheat your oven to 180°C.
Peel the two bananas and mash them with a fork. Beat the eggs with the sugar, vanilla sugar and melted butter in a bowl. Add the flour and baking powder. Mix until smooth. Add the chopped walnuts and mashed bananas.
Butter a cake tin and pour a little flour inside to line it. Remove the excess and pour in the mixture. Bake the cake for 45 minutes.
Leave to cool when removed from the oven. It's ready to eat.
